A delicate, versatile, semi-soft food made by adding a mineral salt to soymilk, which solidified it into a white "cake". Tofu has become increasingly more popular in the United Sates and is used in everything from soup to main course, to dessert.
Tofu has good calcium content, if processed with calcium. If processed with calcium, 1 cake of soft tofu (2-1/2" x 2-3/4" x 1"), as 90 calories and 154 milligrams of calcium. A glass of milk has approximately 313 milligrams of calcium and 1/2 cup of cooked spinach has 100 milligrams.
